In a mixing glass, muddle the fresh ginger and simple syrup. Add the fresh lime juice and vodka and shake with ice

Bring 1/3 cup ginger (peeled and chopped), 3/4 cup sugar and 3/4 cup water to the boil, stirring until the sugar is dissolved. Remove from the heat and let it sit, covered, for 20-30 minutes.
Muddle mint, lime juice and ginger syrup, add to a cocktail shaker with the vodka over ice and strain
Strain and pour into a tall glass with ice and top with ginger beer
