Bring 1/3 cup ginger (peeled and chopped), 3/4 cup sugar and 3/4 cup water to the boil, stirring until the sugar is dissolved. Remove from the heat and let it sit, covered, for 20-30 minutes.
Muddle mint, lime juice and ginger syrup, add to a cocktail shaker with the vodka over ice and strain
Strain and pour into a tall glass with ice and top with ginger beer
Garnish with a mint sprig

In a mixing glass, combine all the ingredients except the Champagne
Strain into a fluted glass of your choice (we love a tulip shape)
Top up with chilled Champagne

Squeeze the lime juice into a copper mug filled with crushed ice. If you don’t have a copper cup, go for a highball glass
Add vodka and ginger beer
Stir well and garnish with a lime wheel
